Pig Latin: A Vacation for the Senses

Tucked alongside the river in downtown Eagle is a place that doesn’t just serve food — it transports you. Walk through the doors of Pig Latin, and you’ll find yourself wrapped in the warm, tropical air of an atrium-style patio, sipping a cocktail while lush foliage sways under gentle fans. It’s more than a restaurant; it’s a mood.

    And that’s no accident.

“When we took over the space, we wanted to honor the legacy of a great patio but elevate it to something year-round,” says Has Mahmood, part-owner and operating partner. “We call it ‘glamping’ — glamorous camping. You’re outside, but it’s a controlled, comfortable environment. The goal was to make you forget where you are. You’re looking at water, surrounded by greenery, and suddenly you’re on vacation.”

They’ve recently expanded the patio, programming an uncovered section with additional seating — and customers are taking notice. “Amazing,” is the word Has hears most often about the transformation from the previous restaurant. “People come for the food, but leave saying it felt like an escape.”

The Food: Elevated, Intentional, and Surprisingly Global

“We’re not Mexican. We’re Latin-inspired,” Has says. “We do tapas-style small plates meant to be shared, but we’re not boxed into a genre. If it’s just good food, it’s going on the menu.”

Think prime skirt steak tacos, wild-caught octopus, and pork belly imported from Japan. All their meat is prime. All their oils are clean — olive, tallow, butter — no seed oils here. Even the shrimp is wild-caught Argentinian red. The attention to sourcing is meticulous.

“We’ve taken heat for portion sizes,” Has admits, “but when you’re using the highest quality ingredients, it adds up. I’d rather take a smaller profit margin and put out something I’m proud of.”

That pride shows. And if customers don’t always understand why their tacos cost $18, they don’t take it personally. “May cost you more, but your body loves you,” he says with a grin.

A Community Hub, Not Just a Restaurant

Pig Latin is more than a dinner spot — it’s quickly becoming a cultural venue. In May, they transformed the space into “Club Latin,” a one-night dance party hosted with the nonprofit Under the Trees, supporting environmental causes through music. The location wasn’t announced until the day-of, giving it an exclusive underground vibe.

“We moved furniture, brought in DJ equipment, and turned it into a full-on event,” says Has. “It’s not our core business, but it’s fun — and it gives back.”

Have an idea for an event? Bring it to them. Pig Latin is open to creative collaborations — whether it’s a ticketed dinner, a themed party, or a private bridal shower. With two bars and multiple flexible spaces, they can accommodate partial or full buyouts with ease.

The Vision: Redefining Dining in Eagl

“We want to be a culinary destination,” says Has. “And not just for the food — for the way people feel when they’re here.”

Whether it’s a date night, girls’ night, or a special celebration, Pig Latin brings something different to Eagle. It’s playful, surprising, and entirely transportive.

You don’t come here just to eat. You come here to feel something.
