Local restaurants show off their salad dressing

Residents congregate at Rembrandt’s,
housed in a former 1800s era church for convivial repasts. Appropriately named,
Rembrandt’s creates salads that are works of art. The Peruvian captures the
flavors of South America with marinated grilled steak, mixed greens quinoa,
roasted corn salsa, avocado, sweet potato, and red wine vinaigrette. Or if a taste of Italy is more appealing try
the Tuscan–a combination of grilled
chicken, baby spinach, farro, roasted tomato, pickled red onion, goat cheese,
pine nuts, and maple balsamic vinaigrette. It’s destination dining, especially
in the warmer months when you can dine al fresco.

After a brisk walk on the neighboring greenbelt, lounge on Bardenay’s patio and treat yourself to one of their specialty salads like the Charbroiled Spicy Shrimp Salad, featuring sambal, garlic and lime-marinated white shrimp over mixed greens, diced tomatoes and blue cheese crumbles, tossed with blue cheese vinaigrette. Too much heat for you? Try the Seared Yellowfin Tuna Salad–mixed greens with roasted sweet peppers, roma tomatoes, feta cheese, Kalamata olives, capers and toasted pine nuts is tossed with a lemon-herb vinaigrette and topped with a seared rare yellowfin tuna filet. A vegetarian option is the Pear Spinach Salad–a flavorful shallot vinaigrette is the perfect match for spinach, crumbled gorgonzola cheese, diced pears and balsamic-orange glazed walnuts. Bacquet’s Restaurant opened in June 2018, but its owners Franck and Michele Bacquet already have a legion of fans and followers. Eagle residents don’t have to travel to Paris to sample authentic French cuisine. From northeast France, the salad Vosgiene. is composed of crunchy local organic mixed greens, cucumber, tomatoes, red onions, drizzled with a classic vinaigrette then finished with creme fraiche, sauteed bacon and egg a cheval (over easy) placed on top of the salad and drizzled with balsamic glaze. Dine outside on the courtyard patio and enjoy spring’s embrace of flowers, vines and a gurgling fountain, with live music most nights. Step inside, and you might imagine yourself in one of the many galleries of the Louvre–the walls are adorned with paintings–some created by Franck– and others from the Bacquets’ personal collection.
